Burrata bruschetta

Reimagine the classic Italian summer salad in cocktail form. Think refreshing, savoury flavour with a creamy note.
Put the quartered cherry tomatoes and basil leaves in a cocktail glass and gently muddle.
Add the gin, dry vermouth and mozzarella brine. Gently stir and leave for 10 minutes for the flavours to mingle and infuse.
Add some ice and shake well, then double-strain into a chilled martini or coupe glass. Drizzle with a little olive oil and serve with the skewer of mini mozzarella balls, basil and cherry tomatoes.
