This Malaysian preserved plum cocktail from Med Salleh in London looks sophisticated and is surprisingly easy to make
Infuse vodka with feta to add a salty, creamy edge to this martini that's blended with fresh watermelon
Crumble 25g feta into 250ml vodka. Add a strip of lemon peel, briefly stir then infuse in the fridge for two hours.
Double strain the feta vodka mixture using a coffee filter or jelly bag before using. Blitz a handful of chopped watermelon (rind removed) until smooth.
Put the chopped watermelon in a cocktail shaker with 60ml of the feta vodka and 2.5ml of feta brine. Shake well then double strain into a chilled martini glass. Garnish with feta, mint and watermelon cubes on a cocktail stick.
