Hannah says: "Adding feta to a martini might feel like quite a rogue decision, but we only do it for a couple of hours in the fridge and it gives the vodka a savoury, slightly creamy edge. Adding a little bit of lemon peel really lifts it as well and then when you add it to the watermelon it stops it from being too sweet but still mega refreshing."


Feta and watermelon martini recipe

  • 25g feta
    brine reserved and extra to serve
  • 250ml vodka
  • Strip of lemon peel
  • Handful fresh watermelon
    plus extra to serve
  • fresh mint leaves
    to garnish

Method

  • step 1

    Crumble 25g feta into 250ml vodka. Add a strip of lemon peel, briefly stir then infuse in the fridge for two hours.

  • step 2

    Double strain the feta vodka mixture using a coffee filter or jelly bag before using. Blitz a handful of chopped watermelon (rind removed) until smooth.

  • step 3

    Put the chopped watermelon in a cocktail shaker with 60ml of the feta vodka and 2.5ml of feta brine. Shake well then double strain into a chilled martini glass. Garnish with feta, mint and watermelon cubes on a cocktail stick.
